Put a pinch of salt, one yolk, a teaspoon of mustard, half a teaspoon of sugar, a teaspoon of lemon juice, chives and a tablespoon of water into a high dish. Insert the blade of the blender and pour a glass of oil or flavored oil gently on the wall of the dish.
Start to whipping mayonnaise, remembering that the blender should be set at the lowest speed, and whipping should be pulsed with a gentle lifting up and down.
Mayonnaise made of oil can be stored in the fridge for a week. It is very aromatic and is great for salads and as a dip for fresh vegetables.
